(Vegetarian) Burrito Plate Recipe for under $1.80

Have you ever tried a burrito without the wrap? This burrito plate recipe is easy fast and health and very affordable. You can prepare this recipe vegetarian or add chicken. I left the chicken out because I like to have a meatless meal sometimes. It still fills you up pretty good. This burrito plate recipe serves 4 plates but you can also put it into a wrap and eat it.

Cost of the Burrito Plate Recipe

1-1/2 cup white long grain rice 0.50

Cilantro (optional)

Mexican seasoning 0.30

1/2 lettuce 0.75

10 tomatoes 1.00

1 can corn 0.49

1 can black beans 0.59

3 Avocado 3.00

1 lime 0.29

The whole meal costs $6.92 so one big filling plate would cost you only $1.73! Of course it gets more expensive if you add the chicken but it would be still very reasonable priced.

How to prepare the Burrito Plate

Add 1-1/2 cup rice to a pot with 3 cups of water and 1-1/2T canola oil and let boil until soft. Add more water if necessary. Season with 1t salt, juice of 1/2 a lime and some cilantro (optional). Mix all the spices in a small bowl and it should equal 3 teaspoons. One teaspoon goes into the black beans, one into the guacamole and one over the chicken. If you leave the chicken out just save the rest of the seasoning or add it to the meal as desired.

For the easy guacamole mash 3 avocados with a fork and add the juice of 1/2 a lime, plus the 1 t of the seasoning mix and cilantro (optional)

Layer the plate with rice all the vegetables and top with guacamole.

  • 1/2t chili powder
  • 1/4t oregano
  • 1/2t cumin ground
  • 1/4t pepper
  • 1/4t red pepper/paprika powder
  • 1/4t onion powder
  • ---
  • 1-1/2 cup white long grain rice

  • 1 lime
  • 1t salt

  • 10 medium tomatoes diced
  • 3 avocado
  • cilantro (optional)
  • 1/2 lettuce
