Turkey Meatloaf & Mashed Potatoes Recipe
This homemade turkey meatloaf and mashed potatoes recipe served with corn is not just a very comforting dinner but also for $1.60 a plate very cheap and frugal. Classic but it will fill your stomach! My son started to avoid meat, but if he can dip something into ketchup he will eat it! :). That is why the turkey meatloaf is perfect for the whole family.
I bought all my ingredients at ALDI and added a list of all costs. You can substitute the heavy cream with milk and add a little bit of butter: ground turkey 3.29,1 toast 0.16,1 egg 0.05, ketchup and spices 0.20, potatoes (half the bag) 1.75, heavy cream n/a, milk 0.03, corn (canned, frozen one is double the price) 2x 0.89,
The whole meal is $6.40 So one nicely filled plate is $1.60.
Preheat the oven to 400F, mix all ingredients for the turkey meatloaf together and place it into the oven safe dish.
While the meatloaf is in the oven i will prepare and cook the potatoes. It takes around 15 to 20 minutes until they are soft. Then i just add all the ingredients and mash them.
One ingredient that i did not find at ALDI is the
powdered vegetable stock. I find the liquid one tastes terrible and the powder is like a concentrate that you have for a very long time.
