One Pot White Chicken Chili Recipe – Easy and Frugal
One Pot white chicken chili with shredded chicken, green bell pepper, northern beans, cilantro and chili. A 30 minute dinner with one pot cooking and super frugal. One big serving for under $1.50.
Today I have an easy one pot recipe for you with chicken, northern beans, cilantro, green bell pepper and more. The cumin, garlic and chili give the white chicken chili a good taste.
This meal is under $1.44 per plate using one chicken breast. If you desire more meat you can simply add more chicken. I usually freeze the other chicken breasts in the package for a later recipe.
Tips and tools to prepare the one pot white chicken chili
After cooking the chicken for about 25 minutes you can either leave it in chunks or shred it. I like to shred the chicken and add it back into the pot. This gives the chili a great texture.
Prepare the one pot chili
Add all ingredients into one pot except the milk and the corn starch.
Let simmer until chicken is not pink anymore (20-30 minutes) (you can take the chicken out and shred it or leave the chunks)
Now mix milk and starch until there are no clumps. Turn heat to high and stir in the milk mix. Take pot off the stove once the chili has thickened.
You can add some chips with dip or saltine crackers on the side. We also like to top the chili with shredded cheese and sour cream.
