My family loves a fresh tomato soup especially for fall and winter. This recipe uses garden fresh tomatoes but you can use canned tomatoes. I made this dinner recipe in 20 minutes. Very fast and healthy dinner idea

I am not listing the price for the Fresh Tomato Recipe this time because we got a lot of tomatoes from our friend’s garden and I had the rest of the ingredients already in my kitchen. I like using fresh tomatoes but you can also just use the canned tomatoes to make it easier on you. Sometimes they can be cheaper.

How to cook the Fresh Tomato Soup Recipe

You will need two middle sized or big pots. Cut the tomatoes and onions in big chunks and put them into pot number 1. Add basil, oregano, salt, pepper, sugar, water, vegetable stock base and cloves and cook for 15 minutes. Mix with a hand blender.

In pot number 2 mix flour and butter on medium heat and stir until it browns.

Then add 1 scoop of the blended tomato soup from pot 1 into pot 2 and keep stirring. Once it thickens add the next scoop. After 4 scoops you can pour all the rest of the fresh tomato soup from pot 1 into pot 2. Let it boil and stir for 1 minute and your are done.

Ingredients

  • 8 big or 8 cups fresh tomatoes
  • 1/2 large onion
  • 4 cups water
  • 2 t vegetable stock powder base
  • 2 t salt
  • pepper to taste
  • 3 t sugar
  • 1 t basil
  • 1 t oregano
  • 3 cloves garlic
  • 7 t butter
  • 7 t all purpose flour

Instructions
