Chicken Linguine Alfredo Recipe

Adding more broccoli to the chicken Alfredo will substitute a part of the meat. Using only 1 chicken breast and a whole bag of broccoli makes this Alfredo dinner healthier and cheaper to prepare.

1 chicken breast ($1.30)

garlic/seasoning/flour/butter ($0.40)

3 cups milk ($0.33)

1 bag broccoli fresh ($1.99)

8 oz. shredded Colby-Monterey Jack cheese ($1.66)

1/2 cup heavy cream ($0.40)

1/2 cup parmesan shredded ($0.40)

linguine organic ($1.19)

The meal costs around $7.67, which equals $1.28 if you serve 6 normal sized plates or $1.92 for 4 large sized servings.

I am using 1 chicken breast for the recipe and usually there are 3 chicken breasts in one pack. You can freeze the rest to use later.

Frugal Chicken Linguine Alfredo

Yields 4-6

Ingredients

  • 1 lb. linguine pasta
  • 1 clove garlic
  • 4 T butter
  • 4 T flour
  • 1 chicken breast cut into chunks
  • 2 t Italian seasoning / Italian herbs
  • 1 bag fresh broccoli
  • 3 cups milk
  • 1/2 cup heavy cream
  • 1 t salt
  • 8 oz shredded Colby-Monterey Jack cheese
  • 1/2 parmesan shredded

Instructions

  1. Cut broccoli florets off the stem and steam until soft.
  2. Cook the Pasta according to the package (mine said 9 minutes) in a pot.
  3. Add 4T butter to a pan and cook garlic and then chicken. When chicken is not pink anymore sprinkle flour over it.
  4. Stir in milk and heavy cream step by step. Keep stirring and let thicken after each step.
  5. Toss in all the cheese, salt and herbs and serve over the linguine!
